- Heat oil in a large pan over medium heat.
- Add chicken and cook 6 to 8 minutes until golden and cooked through.
- Remove chicken and set aside.
- Add garlic to the same pan and cook 30 seconds until fragrant.
- Stir in soy sauce, pineapple juice, honey, and vinegar.
- Simmer for 2 minutes.
- Whisk cornstarch with water and add to the sauce.
- Simmer until thickened.
- Return chicken to the pan with pineapple and bell pepper.
- Cook 3 to 4 minutes until coated.
- Stir in cooked rice and heat through.
- Garnish with green onions, sesame seeds, and red pepper if desired.
Notes
Use day-old rice for best texture and always mix cornstarch with cold water to prevent lumps.
