Ingredients
  

  • 2 salmon fillets about 6 oz each
  • 1 cup white rice jasmine or basmati
  • 1 medium onion finely chopped
  • 2 garlic cloves minced
  • 2 cups chicken or vegetable broth
  • Juice of 1 lemon
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic and sauté until soft and fragrant.
  3. Stir in rice and toast for 1–2 minutes.
  4. Add broth, lemon juice, salt, and pepper and bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Place salmon fillets on top of the rice.
  7. Cover and cook for 10 minutes until salmon is cooked through.
  8. Remove from heat, fluff rice, and serve.

Notes

For extra flavor, add lemon zest or fresh herbs like parsley or dill before serving.
