- Heat olive oil in a large pot over medium-high heat.
- Season chicken thighs with salt and pepper and sear until golden on both sides.
- Remove chicken and sauté onion and garlic in the same pot until fragrant.
- Add carrots and potatoes and stir to coat.
- Pour in chicken broth and return chicken to the pot.
- Sprinkle with thyme and parsley and bring to a gentle simmer.
- Cover and cook on low heat for 30 minutes until chicken is cooked through.
- Uncover, adjust seasoning, and serve warm.
