Ingredients
  

  • 1 lb kielbasa sausage sliced into 1/2-inch rounds
  • 1 lb baby potatoes halved
  • 2 bell peppers sliced
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F.
  2. Combine potatoes, peppers, onion, and garlic in a large bowl.
  3. Drizzle with olive oil and season with paprika, salt, and pepper.
  4. Toss well until evenly coated.
  5. Fold in sliced kielbasa gently.
  6. Spread mixture onto a rimmed baking sheet in a single layer.
  7. Roast for 25–30 minutes, stirring halfway through.
  8. Flip potatoes cut-side down when stirring for extra crispiness.
  9. Remove from oven when vegetables are tender and kielbasa is browned.
  10. Garnish with fresh parsley.
  11. Rest 5 minutes before serving.

Notes

For extra crispiness, broil the pan for 2–3 minutes at the end, watching closely.
