- Preheat oven to 400°F.
- Combine potatoes, peppers, onion, and garlic in a large bowl.
- Drizzle with olive oil and season with paprika, salt, and pepper.
- Toss well until evenly coated.
- Fold in sliced kielbasa gently.
- Spread mixture onto a rimmed baking sheet in a single layer.
- Roast for 25–30 minutes, stirring halfway through.
- Flip potatoes cut-side down when stirring for extra crispiness.
- Remove from oven when vegetables are tender and kielbasa is browned.
- Garnish with fresh parsley.
- Rest 5 minutes before serving.
Notes
For extra crispiness, broil the pan for 2–3 minutes at the end, watching closely.
