Method
- Mash strawberries in a bowl until jam-like with some small chunks.
- Stir in chia seeds and honey; rest 10–15 minutes to thicken.
- Line a baking sheet with parchment and form 1-tbsp medallions of the mixture.
- Freeze 30 minutes until firm.
- Melt chocolate chips and coconut oil in 30-second intervals until smooth.
- Dip each frozen medallion in chocolate, tapping off excess.
- Place on parchment and chill until set.
