Ingredients
  

  • 2 cups fresh strawberries finely chopped
  • 2 tbsp chia seeds
  • 1 tbsp honey or maple syrup
  • 1/2 cup dark chocolate chips
  • 1 tsp coconut oil

Method
 

  1. Mash strawberries in a bowl until jam-like with some small chunks.
  2. Stir in chia seeds and honey; rest 10–15 minutes to thicken.
  3. Line a baking sheet with parchment and form 1-tbsp medallions of the mixture.
  4. Freeze 30 minutes until firm.
  5. Melt chocolate chips and coconut oil in 30-second intervals until smooth.
  6. Dip each frozen medallion in chocolate, tapping off excess.
  7. Place on parchment and chill until set.
