Ingredients
  

  • 1 bunch collard greens about 1 lb, stems removed and chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons white or yellow miso paste
  • 3 cloves garlic minced
  • 1 cup low-sodium vegetable broth
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Optional: red pepper flakes sesame oil, or crispy bacon

Method
 

  1. Rinse collard greens thoroughly, pat dry, remove tough stems, and chop leaves.
  2. Heat a large skillet over medium heat and melt 1 tablespoon butter.
  3. Add minced garlic and sauté for about 60 seconds until fragrant.
  4. Add collard greens and cook, stirring frequently, until wilted.
  5. In a small bowl, whisk miso paste with a few tablespoons of warm broth until smooth.
  6. Pour the miso mixture over the greens and stir to combine.
  7. Add remaining broth gradually, adjusting to desired consistency.
  8. Reduce heat to medium-low and simmer for 10–12 minutes until greens are tender.
  9. Remove from heat and stir in remaining butter and lemon juice.
  10. Season with salt and pepper to taste and serve warm.

Notes

Always dissolve miso paste in warm broth before adding to the pan to avoid clumping. Avoid boiling after miso is added to preserve flavor and beneficial compounds.
