Ingredients
  

  • 1 lb ground lamb
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup crumbled feta
  • 1 large egg beaten
  • 1/4 cup breadcrumbs
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 4 chicken breasts
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped cucumber
  • 2 tbsp chopped dill
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for cooking chicken
  • 1 cup sun-dried tomatoes
  • Mixed greens
  • Pita bread or couscous

Method
 

  1. Preheat oven to 375°F and line a baking sheet with parchment.
  2. Combine lamb, onion, parsley, mint, feta, egg, breadcrumbs, oregano, salt and pepper. Mix gently.
  3. Roll into 1-inch meatballs and place on baking sheet.
  4. Drizzle with olive oil and bake 20–25 minutes until 165°F.
  5. Mix yogurt, cucumber, dill, garlic, lemon juice, salt and pepper to make tzatziki.
  6. Heat olive oil in skillet and cook chicken 5–7 minutes per side until 165°F.
  7. Rest chicken 5 minutes and top with tzatziki.
  8. Serve with sun-dried tomatoes, greens, and pita or couscous.

Notes

Drain cucumber well for thick tzatziki. Use ground turkey for a lighter meatball option. Add sumac or extra dill for deeper Mediterranean flavor.
