Ingredients
  

  • 1 cup cottage cheese full-fat or low-fat
  • 1/2 cup heavy cream or Greek yogurt
  • 2 tablespoons matcha green tea powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Method
 

  1. Add cottage cheese, heavy cream, matcha powder, honey (or maple syrup), vanilla extract, and salt to a blender or food processor.
  2. Blend for 1–2 minutes until completely smooth and creamy, scraping down sides as needed.
  3. Taste and adjust sweetness if needed, then blend briefly again.
  4. Divide the mousse evenly into four serving bowls or glasses.
  5. Cover and refrigerate for at least 30 minutes until set.
  6. Serve chilled, optionally topped with extra matcha powder or whipped cream.

Notes

For a keto version, replace honey with erythritol or monk fruit sweetener. Chill overnight for deeper matcha flavor.
