Ingredients
  

  • lbs large raw shrimp peeled and deveined
  • 3 tbsp extra virgin olive oil
  • Juice + zest of 1 large lemon
  • 4 cloves garlic minced
  • 1 tsp paprika sweet or smoked
  • 1 tsp dried oregano
  • ¾ tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes optional
  • ¼ cup fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. Whisk olive oil, lemon juice and zest, garlic, paprika, oregano, salt, pepper, and red pepper flakes in a bowl.
  2. Pat shrimp dry and toss into marinade until fully coated.
  3. Marinate for 15–30 minutes in the refrigerator.
  4. Preheat grill or grill pan to medium-high heat and oil grates.
  5. Thread shrimp onto skewers.
  6. Grill shrimp for 2–3 minutes per side until pink and lightly charred.
  7. Remove from grill and sprinkle with fresh parsley.
  8. Serve immediately with lemon wedges.

Notes

Do not marinate longer than 30 minutes or shrimp can become mushy. Pat shrimp dry for better grill char. Cook quickly over high heat for best texture and flavor.
