Ingredients
  

  • 12 oz rigatoni pasta
  • 1 lb Italian sausage casing removed
  • 1 can 14.5 oz crushed tomatoes
  • 3 cloves garlic minced
  • 1 medium onion chopped
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Method
 

  1. Bring a large pot of salted water to a boil and cook rigatoni until al dente. Drain and reserve 1 cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chopped onion and minced garlic; sauté until softened and fragrant.
  4. Add Italian sausage and cook, breaking it apart, until browned and fully cooked.
  5. Stir in crushed tomatoes, salt, and pepper.
  6. Reduce heat and simmer sauce for 10 minutes, stirring occasionally.
  7. Add cooked rigatoni to the skillet and toss to coat with sauce.
  8. Add reserved pasta water as needed to loosen the sauce.
  9. Remove from heat and stir in Parmesan cheese.
  10. Garnish with fresh basil and serve hot.

Notes

For extra flavor, use spicy Italian sausage or add red pepper flakes while sautéing the onions and garlic.
