Ingredients
  

  • 2 cups raw pecans
  • 15 large Medjool dates pitted
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ cup mini chocolate chips

Method
 

  1. Toast pecans at 350°F for 8–10 minutes until fragrant, then let cool.
  2. Pulse pecans in a food processor until coarse crumbs form.
  3. Add dates, vanilla, and salt, then process until a sticky dough forms.
  4. Add chocolate chips and pulse briefly to combine.
  5. Scoop and roll into balls using your hands.
  6. Chill for 20–30 minutes or enjoy immediately.

Notes

Use soft Medjool dates for best texture. Avoid over-processing to keep some crunch. Chill dough if too sticky before rolling.
