Ingredients
  

  • 8 large unwaxed lemons zest only
  • 3 cups high-quality vodka
  • 1 cup granulated white sugar
  • 1 cup filtered water

Method
 

  1. Wash and dry the lemons thoroughly, then peel only the yellow zest, avoiding the white pith.
  2. Juice the lemons and strain to remove pulp and seeds.
  3. Place lemon peels into a large glass jar and pour vodka over them until fully submerged.
  4. Seal the jar tightly and store in a cool, dark place for 14–30 days, shaking gently every few days.
  5. When infusion is complete, strain out and discard the lemon peels.
  6. In a saucepan, bring water to a gentle boil and add sugar, stirring until fully dissolved.
  7. Remove syrup from heat and allow it to cool completely to room temperature.
  8. Combine the cooled syrup with the infused vodka and fresh lemon juice, stirring well.
  9. Funnel the limoncello into clean glass bottles and refrigerate or freeze before serving.

Notes

Store in the freezer for best texture and flavor. Shake gently before serving if separation occurs.
