Ingredients
  

  • 1 head romaine lettuce shredded
  • 1/2 head iceberg lettuce shredded
  • 1 cup cherry tomatoes halved
  • 1 small red onion thinly sliced
  • 1/2 cup sliced pepperoncini peppers
  • 8 slices provolone cheese sliced into strips
  • 1/4 lb sliced ham chopped
  • 1/4 lb sliced soppressata salami chopped
  • 1/4 lb sliced Genoa salami chopped
  • 3/4 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1/4 cup pepperoncini juice
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 3 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • Crushed red pepper to taste
  • Black pepper to taste

Method
 

  1. In a small bowl, whisk together mayonnaise, red wine vinegar, pepperoncini juice, Parmesan cheese, garlic, Italian seasoning, salt, crushed red pepper, and black pepper until smooth.
  2. Let the dressing rest for 5 minutes to allow flavors to blend.
  3. Shred the romaine and iceberg lettuce and place in a large mixing bowl.
  4. Add cherry tomatoes, red onion, pepperoncini, ham, soppressata, Genoa salami, and provolone cheese.
  5. Pour the dressing over the salad.
  6. Toss gently until all ingredients are evenly coated.
  7. Serve immediately for best crunch.
