Ingredients
  

  • 2 cups heavy cream
  • 1 cup whole milk
  • ½ cup granulated sugar
  • 1 tbsp vanilla extract
For the Chocolate Coating:
  • cups semi-sweet or dark chocolate chips
  • 3 tbsp coconut oil or butter for a softer shell

Method
 

  1. Step 1: Prepare the Ice Cream Base
  2. In a bowl, whisk together heavy cream, milk, sugar, and vanilla extract until the sugar dissolves.
  3. Pour the mixture into popsicle molds and insert sticks.
  4. Freeze for at least 6 hours (or overnight) until fully set.
  5. Step 2: Make the Chocolate Coating
  6. Melt chocolate chips and coconut oil together in the microwave in 30-second intervals, stirring between each, until smooth.
  7. Allow the melted chocolate to cool to room temperature but remain liquid.
  8. Step 3: Coat the Popsicles

  10. Remove the frozen popsicles from the molds.
  11. Dip each popsicle into the melted chocolate, letting excess drip off. (For a thicker shell, dip twice!)
