Step 1: Prepare the Ice Cream Base
In a bowl, whisk together heavy cream, milk, sugar, and vanilla extract until the sugar dissolves.
Pour the mixture into popsicle molds and insert sticks.
Freeze for at least 6 hours (or overnight) until fully set.
Step 2: Make the Chocolate Coating
Melt chocolate chips and coconut oil together in the microwave in 30-second intervals, stirring between each, until smooth.
Allow the melted chocolate to cool to room temperature but remain liquid.
Step 3: Coat the Popsicles
Remove the frozen popsicles from the molds.
Dip each popsicle into the melted chocolate, letting excess drip off. (For a thicker shell, dip twice!)
Place the coated popsicles on a parchment-lined tray and freeze for 10–15 minutes until the chocolate hardens.
