Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1 cup creamy peanut butter
  • 1/4 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 3 cups chocolate chips
  • 4 teaspoons coconut oil

Method
 

  1. Combine softened butter and peanut butter in a large bowl; mix until smooth.
  2. Add vanilla extract and mix to combine.
  3. Gradually add powdered sugar, mixing until a thick dough forms.
  4. Line a baking sheet with parchment paper and scoop dough into tablespoon-sized portions.
  5. Roll portions into smooth balls and insert a toothpick into each.
  6. Freeze peanut butter balls for 30 minutes until firm.
  7. Melt chocolate chips and coconut oil in the microwave at 50% power, stirring until smooth.
  8. Dip each peanut butter ball into melted chocolate, leaving a small circle on top uncovered.
  9. Allow excess chocolate to drip off and return buckeyes to parchment-lined tray.
  10. Freeze for 15 minutes to set.
  11. Remove toothpicks and gently smooth holes with a fingertip.

Notes

Always freeze peanut butter balls before dipping to prevent cracking, and keep utensils completely dry to avoid causing the chocolate to seize.
