Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup ricotta cheese
  • cup grated Parmesan cheese
  • 2 cups fresh spinach
  • ¼ cup fresh basil chopped
  • ¼ cup fresh parsley chopped
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • ½ teaspoon crushed red pepper flakes optional
  • 1 cup marinara sauce
  • 2 tablespoons olive oil
  • Toothpicks or kitchen twine

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Pound chicken breasts to about ½-inch thickness.
  3. In a bowl, mix ricotta, Parmesan, spinach, basil, parsley, garlic powder, salt, pepper, and red pepper flakes.
  4. Spoon filling onto each chicken breast, roll tightly, and secure with toothpicks or twine.
  5. Heat olive oil in a skillet over medium-high heat and sear chicken rolls 3–4 minutes per side until golden.
  6. Transfer rolls to a baking dish and pour marinara sauce over the top.
  7. Bake for 20–25 minutes, until chicken reaches an internal temperature of 165°F.
  8. Rest briefly, remove toothpicks, slice, and serve.
