Ingredients
  

  • 125 g all-purpose flour
  • 50 g granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 120 ml milk
  • 1 fresh pineapple sliced into rings
  • 480 ml vegetable oil for frying
  • Cinnamon-sugar mixture for coating

Method
 

  1. Slice fresh pineapple into 1/2-inch rings and remove the core if desired.
  2. Pat pineapple rings dry with paper towels.
  3. In a bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
  4. Add egg and milk, whisk until smooth batter forms.
  5. Heat oil in a deep pot to 375°F (190°C).
  6. Dip each pineapple ring into the batter, letting excess drip off.
  7. Carefully place rings into hot oil in small batches.
  8. Fry for about 2 minutes per side until golden brown.
  9. Remove and drain on paper towels.
  10. Coat warm fritters with cinnamon-sugar and serve immediately.
