Ingredients
  

  • cups all-purpose flour
  • 3 large eggs room temperature
  • 1 cup granulated sugar
  • ½ cup butter melted
  • 1 cup half and half cream
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup powdered sugar for glaze
  • 2 tablespoons fresh lemon juice for glaze
  • 1 tablespoon milk for glaze

Method
 

  1. Preheat oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, beat eggs, sugar, half and half, melted butter, and lemon juice until light and fluffy.
  3. Add flour, baking powder, baking soda, salt, and lemon zest. Mix just until combined.
  4. Pour batter into prepared pan and gently tap to remove air bubbles.
  5. Bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Whisk powdered sugar, lemon juice, and milk to make the glaze.
  8. Pour glaze over cooled cake and allow it to set before slicing.
