Ingredients
  

  • 2 pounds ground beef 80/20
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1/2 cup breadcrumbs or panko/oats
  • 1/4 cup milk
  • 2 eggs
  • 1/2 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 5 –6 pepperoncini peppers sliced
  • 1/4 cup pepperoncini juice
  • Salt and black pepper to taste

Method
 

  1. In a large bowl, gently mix ground beef, ranch mix, au jus mix, breadcrumbs, milk, eggs, onion, and bell pepper until just combined.
  2. Shape the mixture into a loaf and place it carefully into a 6-quart crockpot.
  3. Top the loaf with sliced pepperoncini peppers and drizzle evenly with pepperoncini juice.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until internal temperature reaches 160°F (71°C).
  5. Remove from the crockpot and let rest for 10 minutes before slicing and serving.

Notes

Do not overmix the meat to keep the texture tender. Resting before slicing helps retain juices. A foil or parchment sling makes removal easy.
