Ingredients
  

  • 4 large russet potatoes cut into 1/4-inch fries
  • 2 cups vegetable oil for frying
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 jalapeño sliced
  • 1/2 cup guacamole
  • 1/2 cup salsa
  • 1/4 cup fresh cilantro chopped

Method
 

  1. Rinse potato fries in cold water to remove excess starch and pat completely dry.
  2. Heat oil in a large pot to 350°F and fry potatoes in batches until just tender.
  3. Remove fries and drain on paper towels.
  4. Increase oil temperature to 375°F and fry potatoes again until golden and crispy.
  5. Drain fries and immediately toss with paprika, cayenne, garlic powder, onion powder, cumin, salt, and pepper.
  6. Spread seasoned fries on a serving platter or baking sheet.
  7. Sprinkle shredded cheese over hot fries to melt.
  8. Add sour cream, jalapeño slices, guacamole, and salsa evenly over fries.
  9. Garnish with fresh cilantro.
  10. Serve immediately while hot and crispy.

Notes

For extra crispiness, do not overcrowd the fryer. Assemble toppings just before serving to avoid soggy fries.
