- Rinse potato fries in cold water to remove excess starch and pat completely dry.
- Heat oil in a large pot to 350°F and fry potatoes in batches until just tender.
- Remove fries and drain on paper towels.
- Increase oil temperature to 375°F and fry potatoes again until golden and crispy.
- Drain fries and immediately toss with paprika, cayenne, garlic powder, onion powder, cumin, salt, and pepper.
- Spread seasoned fries on a serving platter or baking sheet.
- Sprinkle shredded cheese over hot fries to melt.
- Add sour cream, jalapeño slices, guacamole, and salsa evenly over fries.
- Garnish with fresh cilantro.
- Serve immediately while hot and crispy.
Notes
For extra crispiness, do not overcrowd the fryer. Assemble toppings just before serving to avoid soggy fries.
