Ingredients
  

  • 2 cups cold mashed potatoes
  • 1/2 cup all-purpose flour
  • 2 tbsp melted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp baking powder optional
  • 1 tbsp butter for frying
  • 1 tbsp vegetable oil for frying
  • 2 tbsp fresh chives chopped

Method
 

  1. In a large bowl, mix cold mashed potatoes, melted butter, salt, pepper, and optional baking powder until smooth.
  2. Gradually add flour and mix by hand until a soft dough forms.
  3. Turn dough onto a floured surface and flatten into a 1/2-inch thick circle, then cut into quarters.
  4. Heat butter and oil in a nonstick skillet over medium heat.
  5. Fry farls 3-4 minutes per side until golden and crispy.
  6. Drain on paper towels, sprinkle with chives, and serve warm.

Notes

Use cold mashed potatoes to prevent sticky dough and ensure crispiness. Fry in batches to avoid crowding the pan.
