- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Dice potatoes into uniform 1/2-inch cubes; rinse in cold water and pat dry.
- In a bowl, toss potatoes with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
- Spread in a single layer on the prepared baking sheet, leaving space between cubes.
- Bake for 25-30 minutes, flipping halfway, until golden and crispy on edges, tender inside.
- Remove and let cool 2 minutes before serving.
Notes
For extra crispiness, add 1 tsp cornstarch to the potatoes before baking. Serve with eggs, avocado, or ketchup for breakfast or brunch.
