Method
- Cook sausage: Heat olive oil in large pot over medium heat. Add sausage, cook 4β5 minutes until browned. Drain grease. Stir in Italian seasoning & paprika.
- Add aromatics: Stir in sweet potato, garlic, red pepper flakes & tomato paste. Cook 1β2 minutes until fragrant.
- Build base: Pour in water. Bring to boil, stirring to dissolve tomato paste. Simmer 15 minutes until sweet potatoes are tender.
- Add tortellini: Stir in tortellini. Cook 10 minutes, following package directions.
- Finish: Remove from heat. Stir in spinach until wilted, then gently mix in heavy cream.
- Season & garnish: Taste, adjust seasoning. Garnish with fresh thyme before serving.
Notes
Remove from heat before adding cream to avoid curdling. Soup base (without cream & tortellini) can be prepared up to 2 days ahead.
