Ingredients
  

  • 12 oz spicy Italian sausage or turkey sausage/plant-based alternative
  • 1 tbsp olive oil extra virgin preferred
  • 1 tbsp Italian seasoning
  • 1 tsp paprika smoked optional
  • 1 large sweet potato ~8 oz, peeled & cubed
  • 5 cloves garlic minced
  • 1/4 tsp red pepper flakes
  • 1 tbsp tomato paste
  • 6 cups water
  • 8 oz three-cheese tortellini refrigerated
  • 4 oz fresh spinach
  • 1/2 cup heavy cream
  • 4 tbsp fresh thyme or 2 tsp dried

Method
 

  1. Cook sausage: Heat olive oil in large pot over medium heat. Add sausage, cook 4–5 minutes until browned. Drain grease. Stir in Italian seasoning & paprika.
  2. Add aromatics: Stir in sweet potato, garlic, red pepper flakes & tomato paste. Cook 1–2 minutes until fragrant.
  3. Build base: Pour in water. Bring to boil, stirring to dissolve tomato paste. Simmer 15 minutes until sweet potatoes are tender.
  4. Add tortellini: Stir in tortellini. Cook 10 minutes, following package directions.
  5. Finish: Remove from heat. Stir in spinach until wilted, then gently mix in heavy cream.
  6. Season & garnish: Taste, adjust seasoning. Garnish with fresh thyme before serving.

Notes

Remove from heat before adding cream to avoid curdling. Soup base (without cream & tortellini) can be prepared up to 2 days ahead.
