- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Whisk cottage cheese and egg yolks together until smooth.
- In a clean bowl, whip egg whites and cream of tartar until soft peaks form.
- Gently fold egg whites into the cottage cheese mixture until combined.
- Scoop mounds of the mixture onto the baking sheet, about 1/2 inch thick.
- Bake for 25-30 minutes until set and lightly golden.
- Cool completely before serving.
Notes
For a sweeter variation, replace savory seasonings with sweetener and vanilla extract. Handle gently as cloud bread is more delicate than traditional bread.
