  • 1 cup full-fat cottage cheese
  • 3 large eggs separated
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon garlic powder optional
  • 1/2 teaspoon onion powder optional
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper optional
  • 1 tablespoon fresh herbs such as chives or parsley optional

Method
 

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Whisk cottage cheese and egg yolks together until smooth.
  3. In a clean bowl, whip egg whites and cream of tartar until soft peaks form.
  4. Gently fold egg whites into the cottage cheese mixture until combined.
  5. Scoop mounds of the mixture onto the baking sheet, about 1/2 inch thick.
  6. Bake for 25-30 minutes until set and lightly golden.
  7. Cool completely before serving.

Notes

For a sweeter variation, replace savory seasonings with sweetener and vanilla extract. Handle gently as cloud bread is more delicate than traditional bread.
