Ingredients
  

  • 1 ciabatta roll split
  • 4 slices turkey or ham
  • 2 slices provolone cheese
  • 1/4 cup roasted red peppers sliced
  • 1/4 cup fresh spinach leaves
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1/4 teaspoon black pepper
  • Optional: sliced avocado
  • Optional: sliced tomato

Method
 

  1. Whisk mayonnaise, Dijon mustard, olive oil, and balsamic vinegar until smooth.
  2. Slice ciabatta roll and lightly toast cut sides in a skillet.
  3. Spread sauce evenly on both halves of the bread.
  4. Layer turkey or ham on the bottom half.
  5. Add provolone cheese over the meat.
  6. Top with roasted red peppers, spinach, and optional tomato or avocado.
  7. Sprinkle with black pepper.
  8. Close sandwich and warm in skillet on low heat until cheese softens.
  9. Slice in half and serve warm.
