Method
- Whisk mayonnaise, Dijon mustard, olive oil, and balsamic vinegar until smooth.
- Slice ciabatta roll and lightly toast cut sides in a skillet.
- Spread sauce evenly on both halves of the bread.
- Layer turkey or ham on the bottom half.
- Add provolone cheese over the meat.
- Top with roasted red peppers, spinach, and optional tomato or avocado.
- Sprinkle with black pepper.
- Close sandwich and warm in skillet on low heat until cheese softens.
- Slice in half and serve warm.

For extra melt and crispness, press the sandwich gently with a spatula or use a panini press.
