- Remove crusts from bread slices and flatten each slice with a rolling pin.
- In a small bowl, mix melted butter, brown sugar, and ground cinnamon until smooth.
- Spread a thin layer of the cinnamon mixture over each slice of bread.
- Roll each slice tightly into a log and place seam-side down.
- In a shallow bowl, whisk eggs, milk, cinnamon, and vanilla extract.
- Heat butter in a non-stick skillet over medium heat.
- Dip each roll-up into the egg mixture, coating all sides.
- Cook roll-ups seam-side down, turning frequently, until golden brown on all sides.
- Remove from skillet and serve warm.
