Ingredients
  

  • 10 slices white sandwich bread
  • 3 tablespoons butter melted
  • 3 tablespoons brown sugar
  • 2 tablespoons ground cinnamon
  • 3 large eggs
  • 1 tablespoon milk
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 2 –3 tablespoons butter for frying

Method
 

  1. Remove crusts from bread slices and flatten each slice with a rolling pin.
  2. In a small bowl, mix melted butter, brown sugar, and ground cinnamon until smooth.
  3. Spread a thin layer of the cinnamon mixture over each slice of bread.
  4. Roll each slice tightly into a log and place seam-side down.
  5. In a shallow bowl, whisk eggs, milk, cinnamon, and vanilla extract.
  6. Heat butter in a non-stick skillet over medium heat.
  7. Dip each roll-up into the egg mixture, coating all sides.
  8. Cook roll-ups seam-side down, turning frequently, until golden brown on all sides.
  9. Remove from skillet and serve warm.
