Ingredients
  

  • cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¾ cup granulated sugar
  • ¾ cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup cinnamon sugar mixture for rolling

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk flour, cocoa powder, baking powder, and salt until combined.
  3. Beat granulated sugar, brown sugar, and eggs until light and fluffy.
  4. Mix in vanilla extract.
  5. Gradually add dry ingredients and mix just until combined.
  6. Cover dough and chill for 30 minutes.
  7. Prepare cinnamon sugar in a shallow bowl.
  8. Roll dough into balls and coat generously in cinnamon sugar.
  9. Place cookies 2 inches apart on baking sheet.
  10. Bake for 10–12 minutes until puffed and tops lose gloss.
  11. Cool on baking sheet for 5 minutes, then transfer to rack.

Notes

Chilling the dough is essential to prevent spreading. Do not overbake—cookies should remain soft and chewy in the center.
