Method
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Whisk flour, cocoa powder, baking powder, and salt until combined.
- Beat granulated sugar, brown sugar, and eggs until light and fluffy.
- Mix in vanilla extract.
- Gradually add dry ingredients and mix just until combined.
- Cover dough and chill for 30 minutes.
- Prepare cinnamon sugar in a shallow bowl.
- Roll dough into balls and coat generously in cinnamon sugar.
- Place cookies 2 inches apart on baking sheet.
- Bake for 10–12 minutes until puffed and tops lose gloss.
- Cool on baking sheet for 5 minutes, then transfer to rack.
Notes
Chilling the dough is essential to prevent spreading. Do not overbake—cookies should remain soft and chewy in the center.
