  • 1 cup Guinness stout
  • 1 cup unsalted butter cubed
  • 3/4 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2/3 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 8 oz cream cheese softened
  • 1 1/2 cups powdered sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract for frosting

Method
 

  1. Preheat the oven to 350°F and grease a 9-inch round cake pan.
  2. Heat the Guinness and butter in a saucepan until the butter is fully melted.
  3. Whisk in the cocoa powder until smooth, then let cool slightly.
  4. In a bowl, sift together flour, sugar, baking powder, baking soda, and salt.
  5. In another bowl, whisk eggs, sour cream, and vanilla extract.
  6. Gently mix the wet ingredients into the dry ingredients.
  7. Stir in the Guinness chocolate mixture and buttermilk until smooth.
  8. Pour batter into the prepared pan and bake for 30–35 minutes.
  9. Cool the cake completely before frosting.
  10. Beat cream cheese and powdered sugar until smooth, then whip in heavy cream and vanilla.
  11. Spread frosting over the cooled cake, slice, and serve.
