Ingredients
  

  • 2 cups cottage cheese full-fat or low-fat
  • 2 scoops peanut butter flavored protein powder or vanilla or chocolate
  • 3 tablespoons unsweetened cocoa powder
  • tablespoons powdered erythritol or stevia to taste
  • 1 teaspoon vanilla extract
  • 2 –4 tablespoons unsweetened almond milk as needed
  • Pinch of salt optional
  • Fresh berries dark chocolate shavings, or chopped nuts for topping

Method
 

  1. Add cottage cheese, protein powder, cocoa powder, sweetener, vanilla extract, salt, and 2 tablespoons almond milk to a blender.
  2. Blend on high for 1–2 minutes until completely smooth and creamy.
  3. Scrape down sides and add more almond milk if needed to reach pudding consistency.
  4. Taste and adjust sweetness as desired.
  5. Spoon into serving bowls or jars.
  6. Chill for 30 minutes for a firmer texture or serve immediately.
  7. Add toppings just before serving.

Notes

For extra thickness, chill longer or drain excess whey from cottage cheese before blending. Sweetener can be adjusted based on protein powder flavor.
