Ingredients

  • 2 –3 cups shredded cooked chicken rotisserie or baked
  • 1 can 10.5 oz cream of chicken soup
  • 1/2 cup sour cream or mayonnaise
  • 1/4 cup low-sodium chicken broth
  • 1 box 6 oz stuffing mix (herb or cornbread)
  • 2 Tbsp melted butter
  • Salt and pepper to taste
  • Optional: garlic powder paprika, or dried herbs

Method

  1. Preheat: Set oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Mix Base: In a large bowl, combine chicken, cream of chicken soup, sour cream, and chicken broth until smooth.
  3. Layer: Spread chicken mixture evenly into prepared dish.
  4. Prepare Stuffing: Make stuffing mix with about 10% less liquid than package calls for to avoid sogginess.
  5. Top & Butter: Spoon stuffing evenly over chicken mixture without pressing down; drizzle with melted butter.
  6. Bake: Bake uncovered for 35–40 minutes until golden brown and bubbling; internal temp should reach 165°F.
  7. Rest & Serve: Let casserole rest 10 minutes before serving for best texture.

Notes

  • Make ahead: assemble up to 24 hours in advance and refrigerate; add 10–15 minutes if baking from cold.
  • For a lighter version, swap sour cream for Greek yogurt.
  • Use turkey instead of chicken for post-holiday meals.
  • To freeze: wrap unbaked casserole tightly; freeze up to 3 months. Thaw overnight before baking.
  • Store leftovers in airtight containers up to 4 days refrigerated.
