Ingredients
  

  • 4 large bell peppers halved and seeds removed
  • 2 tablespoons olive oil divided
  • Salt and black pepper to taste
  • 1/2 lb andouille sausage diced
  • 1/2 lb raw shrimp peeled and deveined
  • 1/2 yellow onion finely diced
  • 1/2 cup celery finely diced
  • 1/2 cup red bell pepper diced
  • 2 cloves garlic minced
  • 1 can fire-roasted diced tomatoes drained
  • 1 1/2 cups cooked rice
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon paprika
  • Dash hot sauce optional
  • 1/2 cup shredded cheese cheddar, pepper jack, or mozzarella
  • Fresh parsley or green onions for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Brush bell pepper halves with olive oil and season with salt and pepper.
  3. Place peppers in a baking dish and bake for 15 minutes.
  4. Heat olive oil in a skillet and brown andouille sausage.
  5. Add shrimp and cook until just pink, then remove both and set aside.
  6. Sauté onion, celery, and red bell pepper until softened.
  7. Add garlic and cook for 30 seconds until fragrant.
  8. Stir in tomatoes, Cajun seasoning, paprika, hot sauce, salt, and pepper.
  9. Return sausage and shrimp to skillet and add cooked rice.
  10. Remove peppers from oven and fill evenly with Cajun mixture.
  11. Top with shredded cheese and bake uncovered for 10–15 minutes.
  12. Garnish with parsley or green onions and serve.

Notes

Do not overcook the shrimp during sautéing, as it will continue cooking in the oven. Pepper jack cheese adds extra heat, while mozzarella keeps the dish milder.
