Ingredients
  

  • 2 chicken breasts skinless and boneless, chopped or shredded
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 1 red or green bell pepper diced
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes, drained
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1/4 cup chicken broth
  • 1 tbsp brown sugar
  • 2 tbsp hot sauce optional
  • Salt and pepper to taste
  • 4 hamburger buns or soft rolls

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add chicken and season with salt and pepper. Cook 5–7 minutes until golden and cooked through, then shred if desired.
  2. Add onion, bell pepper, and garlic. Sauté 3–4 minutes until softened and fragrant.
  3. Stir in Cajun seasoning, smoked paprika, Worcestershire sauce, and tomato paste. Cook 1 minute to bloom the spices.
  4. Add diced tomatoes and chicken broth. Simmer for 10 minutes, stirring occasionally, until thickened and saucy.
  5. Toast hamburger buns. Spoon the Cajun chicken mixture onto the bottom half, add cheese if desired, and top with the other half of the bun. Serve hot.

Notes

For milder flavor, omit hot sauce or reduce Cajun seasoning. Great served with sweet potato fries, coleslaw, or a simple salad. Store leftovers up to 3 days refrigerated or 2 months frozen.
