Ingredients
  

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup hot sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup finely chopped green onions
  • 1/3 cup hot sauce
  • 3 tbsp unsalted butter
  • 1/2 tsp celery salt
  • Blue cheese dressing
  • Celery sticks
  • Chopped parsley

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Mix ground chicken, breadcrumbs, egg, hot sauce, garlic powder, onion powder, salt, pepper, and green onions until just combined.
  3. Form mixture into 1.5-inch meatballs and place on baking sheet.
  4. Bake 20–25 minutes until golden and internal temperature reaches 165°F.
  5. In a saucepan, melt butter and whisk in hot sauce and celery salt to make buffalo sauce.
  6. Toss baked meatballs in sauce until evenly coated.
  7. Garnish with parsley and serve with blue cheese dressing and celery sticks.

Notes

Chill shaped meatballs for 10 minutes before baking to prevent spreading. For keto-friendly meatballs, use almond flour instead of breadcrumbs. Cool the buffalo sauce slightly before tossing for better adhesion.
