- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Mix ground chicken, breadcrumbs, egg, hot sauce, garlic powder, onion powder, salt, pepper, and green onions until just combined.
- Form mixture into 1.5-inch meatballs and place on baking sheet.
- Bake 20–25 minutes until golden and internal temperature reaches 165°F.
- In a saucepan, melt butter and whisk in hot sauce and celery salt to make buffalo sauce.
- Toss baked meatballs in sauce until evenly coated.
- Garnish with parsley and serve with blue cheese dressing and celery sticks.
Notes
Chill shaped meatballs for 10 minutes before baking to prevent spreading. For keto-friendly meatballs, use almond flour instead of breadcrumbs. Cool the buffalo sauce slightly before tossing for better adhesion.
