- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk milk, egg, melted butter, and vanilla extract.
- Gently fold wet ingredients into dry ingredients until just combined.
- Preheat a non-stick skillet over medium heat.
- Scoop tablespoon-sized portions of batter onto the skillet.
- Cook until bubbles form on the surface, then flip.
- Cook the other side until golden brown.
- Repeat with remaining batter and serve warm.
Notes
Do not overmix the batter to keep the pancake poppers light and fluffy.
