- Preheat the oven to 400°F (200°C).
- Halve the sweet potatoes and place them cut side up on a baking sheet. Drizzle with olive oil, season with salt and pepper, and bake for 25-30 minutes.
- Combine the shredded chicken and BBQ sauce in a saucepan. Heat over medium heat until warmed through.
- Scoop out some of the sweet potato flesh to create bowls.
- Fill the sweet potato bowls with the BBQ chicken mix, followed by black beans, corn, and sliced avocado.
- Top with green onions and serve warm.
