Ingredients
  

  • 2 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 1 cup BBQ sauce
  • 1 cup black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1 medium avocado sliced
  • 1/4 cup chopped green onions
  • 1 tsp salt
  • 1 tsp pepper

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Halve the sweet potatoes and place them cut side up on a baking sheet. Drizzle with olive oil, season with salt and pepper, and bake for 25-30 minutes.
  3. Combine the shredded chicken and BBQ sauce in a saucepan. Heat over medium heat until warmed through.
  4. Scoop out some of the sweet potato flesh to create bowls.
  5. Fill the sweet potato bowls with the BBQ chicken mix, followed by black beans, corn, and sliced avocado.
  6. Top with green onions and serve warm.
