Ingredients
  

  • 240 g fresh rhubarb, chopped
  • 125 g all-purpose flour
  • 100 g sugar
  • 1 tsp baking powder
  • 0.5 tsp cinnamon
  • 0.25 tsp cardamom
  • 0.5 tsp salt
  • 120 ml milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 20 ml Oil for frying optional

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the flour, sugar, baking powder, cinnamon, cardamom, and salt until well combined.
  3. In another bowl, whisk together the milk, egg, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and stir gently until just combined.
  5. Fold in the chopped rhubarb gently.
  6. Drop spoonfuls of the batter onto a greased baking sheet.
  7. Bake for 15-20 minutes or until golden brown.
  8. Serve warm, optionally dusted with powdered sugar.

Notes

These fritters are best enjoyed fresh out of the oven. You can also add a sprinkle of powdered sugar for an extra touch of sweetness.
