- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine 1 cup of cottage cheese and 1/4 cup of honey or maple syrup.
- Mix the cottage cheese and syrup until well combined.
- In a separate bowl, mix 1/2 cup rolled oats, 1 tbsp baking powder, 1/2 tsp cinnamon, and 1/4 tsp salt.
- Fold the dry mixture into the wet ingredients until no dry pockets remain.
- Gently fold in 2 cups of fresh blueberries without crushing them.
- Add 2 eggs and 1/4 cup of almond milk to the mixture and mix until just combined.
- Transfer the mixture to a greased baking dish and smooth the top with a spatula.
- Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Allow the dish to cool for a few minutes before serving.
- Scoop portions into bowls and top with extra blueberries or honey if desired.
Notes
This recipe is highly adaptable. Feel free to swap blueberries for other berries or chopped fruit. For a richer flavor, toast the oats lightly before adding them.
