Ingredients
  

  • 180 g all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp kosher salt
  • 2 tsp ground cinnamon
  • 60 g unsalted butter melted
  • 50 g granulated sugar
  • 1 large egg
  • 0.5 tsp vanilla extract
  • 120 ml unsweetened applesauce
  • 225 g finely diced apples Honeycrisp or Gala
  • 240 g powdered sugar
  • 90 ml apple cider or juice

Method
 

  1. Preheat your oven to 400°F and grease a nonstick baking sheet.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, mix melted butter and sugar until combined. Add egg, vanilla extract, and applesauce; whisk until smooth.
  4. Combine the dry ingredients into the wet mixture and fold in diced apples gently.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet.
  6. Bake for about 10 minutes until golden brown. Switch on the broiler to caramelize the tops for an additional 2-4 minutes.
  7. For the glaze, whisk powdered sugar with apple cider until smooth and brush over warm fritter bites.

Notes

These fritter bites are best enjoyed warm and can be drizzled with extra glaze for added sweetness!
