Ingredients
  

  • 120 g Glutinous Rice Flour
  • 120 ml Unsweetened Coconut Milk
  • 60 g Butter melted
  • 100 g Sugar Substitute like erythritol or monk fruit sweetener
  • 0.5 tsp Baking Powder
  • 0.25 tsp Salt
  • 5 ml Vanilla Extract
  • 60 ml Water as needed

Method
 

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, combine the glutinous rice flour, sugar substitute, baking powder, and salt.
  3. In another bowl, mix the melted butter, coconut milk, vanilla extract, and water.
  4. Combine the wet and dry ingredients, stirring until smooth.
  5. Pour the batter into the prepared baking dish.
  6. Bake for 30-35 minutes, or until the top is golden and a toothpick inserted comes out clean.
  7. Allow the mochi to cool in the pan before slicing into squares or rectangles.
  8. Enjoy it warm or at room temperature.
