Method
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until just combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Roll the dough into small balls, about 1 inch in diameter. Place them on the prepared baking sheets, leaving 2 inches between each cookie.
- Gently press a small handful of rainbow gummy bears into the top center of each dough ball.
- Bake for 10 to 12 minutes, or until the edges are lightly golden. The gummy bears will melt and spread.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For best results, do not overmix the dough. The cookies are delicious warm, but also store well in an airtight container for several days. Feel free to experiment with other small candies if gummy bears aren't available.
