- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until the crumbs are evenly moistened.
- Press the crumb mixture firmly and evenly into the bottom of the prepared baking pan to form the crust.
- Bake the crust for 8-10 minutes, until lightly golden. Remove from oven and let it cool slightly.
- In a separate bowl, whisk together the sweetened condensed milk, egg yolks, key lime juice, lime zest, and salt until well combined and smooth.
- Pour the key lime mixture evenly over the pre-baked crust.
- Bake for 20-25 minutes, or until the center is set and no longer jiggly. The edges should be lightly golden.
- Let the bars cool completely in the pan on a wire rack.
- Once cooled, use the parchment paper overhang to lift the bars out of the pan. Cut into squares.
- Serve chilled, topped with whipped cream and lime slices if desired.

For best results, ensure the bars are thoroughly chilled before cutting and serving. This enhances the texture and allows the flavors to fully develop. You can prepare these a day in advance!
