  • 2 cloves Garlic Freshly minced garlic adds the best flavor.
  • 1 cup Shredded Cheese Cheddar or mozzarella are classic choices, but feel free to experiment with other melting cheeses.
  • 1 tsp Salt Adjust to your taste preference, especially if using salted broth or other salty ingredients.
  • 0.5 tsp Pepper Freshly ground black pepper provides the best flavor.

Method
 

  1. Wash the bell peppers and cut the tops off, removing seeds and membranes.
  2. In a skillet, heat olive oil and sauté diced onion and minced garlic until translucent.
  3. Add ground beef to the skillet, season, and cook until browned. Drain excess fat.
  4. Transfer the beef mixture to a bowl and mix in cooked rice and diced tomatoes.
  5. Stuff each pepper with the beef and rice mixture, leaving space for cheese.
  6. Preheat the air fryer to 350°F (175°C) and place the stuffed peppers upright in the basket.
  7. Cook for 12-15 minutes, then add cheese on top and cook for an additional 3-5 minutes until melted.
  8. Let cool for a few minutes before serving.

Notes

These stuffed peppers are wonderfully versatile; consider adding corn, black beans, or a dash of hot sauce to the filling for extra flavor. They can also be prepared ahead of time and refrigerated before air frying for convenience.
