Air Fryer Squash

A quick and healthy side dish, this air fryer squash is seasoned to perfection and makes for a delicious addition to any meal!

Ingredients
  

  • 600 g medium yellow squash about 4 cups, cubed
  • 10 ml spray olive oil for coating
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 30 g grated parmesan heaping tablespoons

Method
 

  1. Prepare the squash by quartering it into small cubes. Spray with olive oil and sprinkle with Italian seasoning, salt, and pepper.
  2. Toss the squash gently with grated parmesan until evenly coated.
  3. Preheat the air fryer at 390°F for 3 minutes. Add a liner to your air fryer basket.
  4. Place the seasoned squash in an even layer in the basket and cook for 5 minutes.
  5. After 5 minutes, toss the squash gently and cook for another 4-5 minutes until golden brown and tender.

Notes

For extra flavor, consider adding garlic powder or red pepper flakes. Serve warm as a side dish or over pasta.
