- Toss sliced bell peppers and onion with olive oil, kosher salt, black pepper, garlic powder, and dried oregano.
- Preheat air fryer to 380 degrees Fahrenheit.
- Place sausage links in the basket with vegetables around them.
- Cook for 8 minutes, then flip sausage and stir vegetables. Cook for an additional 6 to 8 minutes until sausage reaches 160 degrees Fahrenheit internally.
- Rest sausage for 5 minutes, slice, and combine with peppers and onions.
- Serve in hoagie rolls or bowls and garnish with parsley if desired.
