Ingredients

  • 340 g salmon, canned, drained

  • 40 g bell pepper, finely chopped
  • 40 g fresh parsley, chopped
  • 1 clove garlic, minced
  • 1 each egg
  • 5 ml Dijon mustard
  • 5 ml lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • as needed cooking spray or olive oil For greasing the air fryer basket.

Equipment

  • Air Fryer

Method

  1. In a mixing bowl, combine the drained salmon, breadcrumbs, chopped onion, bell pepper, parsley, minced garlic, egg, Dijon mustard, lemon juice, salt, and black pepper.
  2. Use a fork or potato masher to mix the ingredients well until they're thoroughly combined.
  3. Form the mixture into patties, about 3 inches in diameter. You should be able to make around 8 patties.
  4. Preheat the air fryer to 375°F (190°C) for about 5 minutes.
  5. Lightly spray the air fryer basket with cooking spray or brush with olive oil to prevent sticking.
  6. Arrange the salmon patties in a single layer in the air fryer basket. Make sure they are not overcrowded; you may need to cook them in batches.
  7. Cook the patties in the air fryer for 6 minutes, then carefully flip them and cook for an additional 6 minutes, or until golden brown and crispy.
  8. Once cooked, remove the salmon patties and let them cool for a minute before serving.
