Air Fryer Lemon Bars

Deliciously tangy and sweet, these Air Fryer Lemon Bars are the perfect dessert for any occasion.

Ingredients
  

  • 300 g all-purpose flour divided (2 ½ cups for crust and ½ cup for filling)
  • 85 g powdered sugar for the shortbread, plus more for dusting
  • 0.5 tsp salt
  • 170 g unsalted butter melted
  • 3 whole lemons zested
  • 600 g sugar
  • 8 large eggs room temperature
  • 240 ml lemon juice fresh

Method
 

  1. Line a 9x13 baking dish with parchment paper.
  2. Whisk together 2 ½ cups of flour with the powdered sugar and salt, then pour in the melted butter and mix until combined.
  3. Sprinkle the dough into your lined pan and press down into a flat layer. Bake in the air fryer at 350°F (180ºC) for about 10 min or until a light golden color.
  4. Add the sugar to a big bowl and add the zest of three lemons. Mix until the zest is fully incorporated and sugar is a light yellow color.
  5. Add the sugar and remaining half cup of flour to a large bowl and mix well.
  6. Pour in the lemon juice and add the eggs then mix very well until completely combined.
  7. Pour the filling onto the warm crust then transfer to the oven and bake in the air fryer for about 12 minutes, turning halfway through the bake.
  8. Remove from the air fryer and allow to cool for an hour before chilling in the refrigerator for two hours.
  9. Cut into bars using a clean, sharp, damp knife. Clean and re-wet the knife after each cut.
  10. Serve and enjoy your lemon bars!

Notes

These lemon bars are best served chilled. For an extra touch, dust with powdered sugar before serving.
