Method
 

  1. Preheat the air fryer to 380°F.
  2. Slice the eggplant into 1/2 inch slices and dry them with a paper towel.
  3. In a medium bowl, mix the bread crumbs, Parmesan cheese, Italian seasoning, and garlic powder.
  4. Place flour in one bowl and whisk the eggs in another.
  5. Dip the eggplant slices first in the flour, then in the egg, and finally into the bread crumb mixture.
  6. Spray each side of the eggplant with cooking spray and place them in a single layer in the air fryer basket.
  7. Cook for 5 minutes, then flip the slices over and cook for another 4-5 minutes.
  8. Top with marinara sauce and shredded cheese, then cook for an additional 2-3 minutes or until the cheese is melted.
  9. Garnish with fresh parsley or basil. Serve with extra marinara sauce if desired.

Notes

Feel free to adjust seasoning to your taste. For a crispier finish, ensure eggplant slices are well-dried before breading.
