Ingredients
  

  • 450 g white fish fillets (cod, haddock, or tilapia)
  • 120 g all-purpose flour
  • 30 g cornstarch
  • 1 tsp baking powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 240 ml cold sparkling water
  • 1 serving cooking spray for air frying

Method
 

  1. Pat the fish fillets dry with paper towels. Cut the fillets into even portions if they are large.
  2. In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, garlic powder, and paprika. Slowly pour in the cold sparkling water while whisking until a smooth batter forms.
  3. Lightly dredge each fish fillet in a little extra flour, shaking off any excess. Dip the fillets into the batter, ensuring they’re fully coated.
  4. Preheat the air fryer to 400°F (200°C). Spray the basket with cooking spray. Place the battered fish in a single layer, leaving space between each piece. Spray the tops lightly with cooking spray.
  5. Cook for 10–12 minutes, flipping halfway through, until golden brown and crisp. Remove the fish carefully and serve immediately.

Notes

Serve with lemon wedges, tartar sauce, or a side of crispy fries for an ultimate meal!
