Ingredients
  

  • 180 g All-purpose flour
  • 100 g Granulated sugar
  • 2 tsp Baking powder
  • 0.25 tsp Salt
  • 240 ml Plain yogurt
  • 60 ml Milk
  • 1 Large egg
  • 1 tsp Vanilla extract
  • 150 g Fresh blueberries

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine yogurt, milk, egg, and vanilla.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. Gently fold in blueberries.
  6. Fill muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

These muffins are best enjoyed fresh but can be stored in an airtight container for a few days. Try adding lemon zest for an extra zing!
