  • 1 pound ground beef Lean ground beef is recommended to reduce excess grease, or feel free to use ground turkey.
  • 1 packet taco seasoning Use your favorite brand, or make your own for adjustable spice levels.
  • 15 ounces tomato sauce Unsalted tomato sauce allows you to control the seasoning better.
  • 15 ounces diced tomatoes Drain if you prefer a thicker sauce, or include liquid for more moisture and texture.
  • 8 ounces elbow macaroni Cook al dente according to package directions before adding to the skillet for best results.
  • 1 cup shredded cheddar cheese Freshly shredded cheese melts smoother and tastes better than pre-shredded.

Method
 

  1. Cook ground beef in a large skillet over medium heat until browned. Drain off any excess grease.
  2. Stir in the taco seasoning, tomato sauce, and diced tomatoes. Bring to a simmer.
  3. Add the cooked elbow macaroni to the skillet and stir to combine.
  4. Sprinkle the shredded cheddar cheese over the top. Cover and let stand for 5 minutes, or until the cheese is melted and bubbly.

Notes

Serve this delicious taco pasta with a side salad or some crusty bread. For a bit of extra heat, add a pinch of red pepper flakes with the taco seasoning. Top with sour cream, salsa, or fresh cilantro if desired.
